Ingredients

For the Salad:

  • 1 cup uncooked quinoa (or 3 cups cooked quinoa)

  • 1 1/2 cups cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1/3 cup Kalamata olives, pitted and sliced

  • 1/4 cup crumbled feta cheese (optional for vegan version)

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh mint, chopped

For the Dressing:

  • 1/4 cup Colavita Extra Virgin Olive Oil

  • 2 tablespoons freshly squeezed lemon juice

  • 1 garlic clove, minced

  • 1/2 teaspoon Dijon mustard (optional)

  • Salt and black pepper to taste

Instructions

  1. Cook the quinoa: Rinse quinoa thoroughly under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and allow it to cool.

  2. Prepare the vegetables: While the quinoa is cooling, chop the cherry tomatoes, cucumber, red onion, and olives. Chop the parsley and mint.

  3. Make the dressing: In a small bowl or jar, combine Colavita Extra Virgin Olive Oil, lemon juice, minced garlic, Dijon mustard (if using), salt, and black pepper. Whisk or shake well.

  4. Assemble the salad: In a large mixing bowl, combine the cooked quinoa, vegetables, herbs, and feta (if using). Pour the dressing over the salad and toss gently until everything is evenly coated.

  5. Chill or serve immediately: This salad can be served immediately, but chilling for 15 to 30 minutes will enhance the flavor.
