Ingredients

  • 2 carrots, peeled and sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 red onion, cut into wedges

  • 1 cup cherry tomatoes

  • 2 tablespoons Colavita Aged Balsamic Vinegar of Modena

  • 2 tablespoons Colavita Extra Virgin Olive Oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F). Line a large baking sheet with parchment paper.

  2. In a large mixing bowl, combine the carrots, bell peppers, zucchini, red onion, and cherry tomatoes.

  3. In a small bowl, whisk together Colavita Aged Balsamic Vinegar of Modena, Colavita Extra Virgin Olive Oil, oregano, thyme, salt, and black pepper.

  4. Pour the balsamic mixture over the vegetables and toss well to coat evenly.

  5. Spread the vegetables in a single layer on the baking sheet.

  6. Roast for 30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
